This was so easy and refreshing! A perfect salad for our “boiled pork” dish! Thank you @auntyeiko for the inspiration! Instead of stuffing the herb mixture inside the cherry tomatoes I cut them and mixed it together with mushrooms. I made some changes to her original recipe. Substituting lemon juice for organic brown rice vinegar and sugar for mirin. Delicious and simple! 🥰🥰
