Heat oil in a soup pan. Fry onions, celery, carrots, bay leaf for 3 mins

Drain the mixture keeping the liquid. Set veg aside. Add liquid back into soup pot. Add marinara, water, seasoning and bay leaf. Bring to a boil.- 5
Add beans and drained veg. Bring back to a boil. Cool for 5 mins, or until the potatoes are almost fork tender. Add torn spinach, stirring. Add optional chopped chili.- 6
